Why it made our lists
A handmade Japanese vegetable knife with a carbon steel core. For a man who cooks most nights and chops a lot. The edge must be dried and oiled, so skip it for a dishwasher person.
What it is
A handmade 163 mm nakiri (vegetable knife) with a Blue 2 carbon steel core clad in stainless steel, 63 HRC, 50:50 bevel, pin tang handle. Weighs 180 g. Made by Kuro Kuma in Japan.
A handmade Japanese vegetable knife with a flat rectangular blade, forged by Kuro Kuma smiths. The core is Blue 2 carbon steel hardened for edge retention, clad in stainless steel that keeps the dark forge finish and light hammer marks. The handle is stabilised wood, and each knife is a one-off, so the exact piece varies. It is for push-cutting and chopping vegetables. The cutting edge will rust if left wet and darkens with a grey patina over time.
