A Japanese-style vegetable knife with a flat, rectangular blade and a squared-off tip. It is used with an up-and-down chopping motion rather than rocking, so it suits onions, herbs, garlic and soft produce like tomatoes. The blade is layered Damascus steel with an edge sharpened on both sides, and a steel bolster joins blade to handle. It is lighter and thinner than a cleaver. Care is by hand: wash, rinse and dry right away, then store in a block, tray or sheath.
