A Japanese chef's knife with a European-style curved belly and an angled, pointed kiritsuke tip. It is sharpened on both sides and works as an all-purpose kitchen knife with a slight lean toward meat. The core is blue carbon steel wrapped in stainless, so the edge holds well while the sides resist rust, though the exposed edge still needs drying after use. It is thin and light at 154 g. It was made in Seki, Japan.
